In Southeast Asian cuisine, spices serve not only as seasoning but also as a map of cultural memory. Each dish reflects the intersection of a specific region's history, ethnic groups, and lifestyles, leaving a path in memory through scent and flavor.

Southeast Asian Culinary Spices is the culmination of years of field observation and interviews by food writer Chen Ailing. The book not only documents the culinary landscapes of various Southeast Asian countries but also attempts to systematically organize the logic of spice usage, creating a flavor map that integrates sensory experience and cultural understanding, making the knowledge and stories of spices accessible.

This sharing session will feature Chen Ai-ling sharing her fieldwork and writing process, and she will discuss the cultural implications of Southeast Asian cuisine with panelist Honglian. Additionally, samples of some of the spices featured in the book will be on display, allowing participants to not only listen but also experience these key flavor components through their sense of smell, gaining a deeper understanding of the spices that surround us.
